Simple Veal Stew in White Sauce with Mushrooms and Onions.

Serves 6.


  • 3lbs veal (cut into cubes).
  • 1 onion.
  • 1 garlic clove.
  • 1 or 2 carrots.
  • 18 peeled white onions.
  • ½lb mushrooms.
  • 2 egg yolks.
  • ½ cup whipping cream.
  • 1 lemon’s worth lemon juice.
  • Butter, to taste.
  • Salt, to taste.
  • 6-7 cups water.
  • 2 sprigs thyme.
  • 3 sprigs parsley.
  • 1 stick celery.
  • ½ bay leaf.



  1. Cut the veal into 2-inch cubes.
  2. Stick the onion with a clove.
  3. Tie together the celery, thyme, bay and parsley.
  4. Melt 3 tablespoons of butter with oil in a dutch oven or casserole.
  5. Add the veal and brown on all sides.
  6. Add the carrots, onion, herbs and salt.
  7. Add water to cover the meat.
  8. Cook over high heat and bring to the boil.
  9. Reduce the heat, cover and simmer for 45 minutes.
  10. Peel the white onions.
  11. Clean the mushrooms and cut them into quarters.
  12. Melt 3 tablespoons of butter in a skillet.
  13. Add the mushrooms, salt and pepper and sauté until lightly browned then remove the mushrooms.
  14. Put 2 tablespoons of butter in the skillet, add the onions and sauté for 1-2 minutes.
  15. Return the mushrooms to the skillet and keep warm.
  16. Combine the egg yolks with the cream and half of the lemon juice in a bowl.
  17. Remove the meat, the mushrooms and onions and place them in a serving dish.
  18. Pour the cream with the egg-yolk into the meat juice in the casserole.
  19. Cook over very low heat for 10 minutes. Do not let the sauce boil.
  20. Add the lemon juice, salt and pepper if needed.
  21. Pour the sauce over the meat in the dish.
