Simple Roast Partridge

One partridge per person.


  • 1 partridge.

  • 1 rasher bacon.

  • 100g butter.

  • Lard.

  • 1 slice of bread.


  1. Heat oven to 400F

  2. Take an oven ready partridge.

  3. Put a knob of butter inside and a piece of bacon over the breast.

  4. Put some fat into a roasting tin and put it into the hot oven.

  5. When the fat is hot put a piece of bread into the fat.

  6. It should brown in two minutes.

  7. Turn over the bread and put the partridge on top.

  8. Cook for 30 minutes, basting when necessary.

  9. Serve with bread sauce, gravy, vegetables and game chips (warmed ready salted crisps).
