Roasted Woodpigeon

One bird per person.


  • 1 oven ready woodpigeon.

  • 1 rasher bacon.

  • 50g butter.

  • Lard.

  • 1 slice of bread.


  1. Preheat oven to 400F.

  2. Take an oven ready woodpigeon.

  3. Put a knob of butter inside and a piece of bacon over the breast.

  4. Put some fat into a roasting tin and put it into the hot oven.

  5. When the fat is hot put a piece of bread into the fat.

  6. It should brown in two minutes.

  7. Turn over the bread and put the woodpigeon on top.

  8. Cook for 45 minutes, basting when necessary.

  9. Serve with bread sauce, gravy, vegetables and roast potatoes.

  10. Carve as if it is a roast chicken.
