Roast Haunch of Wild Venison

Ingredients:

Venison Haunch

Oil

Method:

  1. Sprinkle a little salt and pepper onto the meat.
  2. Heat 2 tablespoons of oil in a hot pan large enough to place the joint in.
  3. Brown the joint all over in the pan and transfer to a roasting dish.
  4. Cover loosely with foil and place in an oven at 180C.
  5. Roast for 30 minutes (the meat will be rare) or 45 mins (medium rare).
  6. Rest the meat for 15 minutes before carving.
