- Use a rack of Mutton or chops if you prefer
- Large onion-sliced
- 3-4 carrots
- 2 Gloves of Garlic
- 250ml Stock
- Potatoes sliced – enough to cover the casserole
Sear the rack in oil in a heavy casserole. Removed the meat from
the casserole and added a large sliced onion, then 3 -4 carrots.
When the vegetables had softened, imbed the rack in the
vegetables adding a sprig of rosemary, two large cloves of garlic, seasoning,
and a quarter pint of vegetable stock.
Covered the whole with overlapping sliced potatoes, also seasoning
with salt and pepper.
Set to simmer, then covered potatoes with foil, making the dish
Cover with lid, and put the casserole in the bottom oven of the
AGA for 5-7 hours or at 100C in a fan oven.
