Grouse Dinner for Four


  • 4 grouse.
  • Butter
  • Lemon
  • Rowan berries


  1. Take the grouse and stuff each with a knob of butter and a 1/4 lemon or a sprig of rowan berries.
  2. Cook for 20 minutes in a moderate oven.
  3. Then take out and remove the legs and brown them in butter and then do the same with the rest of the bird.
  4. Put in a hot oven for 15 minutes.
  5. Rest for 15 minutes before serving with seasonal vegetables and rowan jelly.
