Ingredients:
- 4 Grouse
- Butter
- Lemon
- Rowan berries
Method:
- Take the grouse and stuff each with a knob of butter and a 1/4 lemon or a sprig of rowan berries.
- Cook for 20 minutes in a moderate oven.
- Then take out and remove the legs and brown them in butter and then do the same with the rest of the bird.
- Put in a hot oven for 15 minutes.
- Rest for 15 minutes before serving with seasonal vegetables and rowan jelly.
