Many customers hanker after the real taste of mutton. We keep a few wether lambs back each year and run them on the hill for another summer (2 year olds), we also carefully fatten five year old ewes. The end product is superb, giving big meaty chops and joints that are so tender if slow cooked overnight.
Our 5 year old mutton has won two awards : Best Seasonal Product in Britain in the 2006 Taste of Britain awards, and best meat product in Dumfries and Galloway's Savour the Flavour taste awards. Soon to be featured on The Hairy Bikers, the photo features Dave (the shepherd), Karen and Kathryn, Silvy and Ben and David and Si (The Hairy Bikers).
The 2 Year Old Mutton is more akin to lamb, though with the richer flavour of its maturity. Heather Fed. The 2 Year Olds are available from August until Easter.

We had the leg of 5 year old mutton on Saturday evening and cooked it exactly to your recipe. It was simply stunning and created quite stir at the table. It was a real taste sensation and I can't recommend it highly enough. Well done to all at Blackface.
