- Venison topside
- Sprinkle a little salt and pepper onto the meat.
- Heat 2 tablespoons of oil in a hot pan large enough to place the joint in.
- Brown the joint all over in the pan and transfer to a roasting dish.
- Cover loosely with foil and place in an oven at 180C.
- Roast for 30 minutes (the meat will be rare) or 45 mins (medium rare).
- Rest the meat for 15 minutes before carving.
