Roe box

The roe deer is the smallest and tastiest of Scotland's deer. The total carcass (including bones etc) weighs approx 12kg.

The Roe Box contains half a roe deer.  As most of the bones are removed, you can expect this this to weigh about 2.5 - 3.5 kilos in total.

We will butcher it into:

• 1 haunch carvery cut
• 1 Striploin, approximately 500g
• 2 * 500g diced neck and shoulder - ideal for stews and casseroles
• fillet, trimmed
