Barbeque Season

Here at Blackface we are all really looking forward to the summer that the Met Office has promised us! To make the most of it we now have three BBQ boxes and can make up tailored boxes for you as well.

If you are planning a BBQ in the next few weeks or for the Whitsun Bank Holiday we can take care of selecting the right cuts of meat for you or you could buy one of our two new BBQ boxes.  As well as the popular Galloway Beef BBQ Box(£63) we now have the Mixed BBQ(£53) and the Large BBQ(£118) boxes, so there is plenty of choice.  All the boxes have a range of steaks for appetites of all sizes. BBC Summer Food Show 10th -14th June

We will be at the Summer BBC Good Food Show this year which runs with the BBC Gardeners World Show at the NEC in Birmingham.  If you are going please come and see us.  It’s great to meet our customers face to face and there will be a special offer for orders taken at the show.  I’ll give out more details of this with the next email.

Bank Holiday

Now is the time to buy for the Whitsun Bank Holiday, or ‘the late spring bank holiday’ as it’s officially now known.  We will deliver on Thursday 21st for the weekend.  Please order by noon on Friday 22nd to be sure of delivery.

Recipe – Barbequed Rump Steak

Do not salt the meat before cooking because that will release the juices from the meat and ruin the caramelisation process, drying out the meat. However, you can roll them in crushed peppercorns, herbs or mixed spices according to your preference.

To achieve the perfect steak on the BBQ seal the meat on all sides as quickly as possible over a really hot part of the grill. This allows the sugar in the steak to caramelise and give that juicy result. Then, depending on the thickness of the meat and your preference, if you need to continue cooking it, you simply raise it further from the embers.

Never prick the steak while it is cooking to see if it’s done as this will release the juices. It’s best to press it gently with your fingers. If it is soft rare; a little give and it is medium; firm it’s well-done. If you’d like to serve with a flavoured butter, then put this on the top of the steak just before you remove it from the grill.

Flavoured butter is easy to make. Soften some butter and add flavouring such as some crushed garlic, finely chopped fresh herbs, or even a little blue cheese. You can harden it in little pats, wrapped in cling film in the fridge for placing on your cooked steak before serving.

If you’d like to marinade your steak as you cook it....

This is enough for 2 of our of rump steaks.

1 fat garlic clove, crushed
2 finely chopped onions
1 teaspoon of mustard
6 tablespoons of oil
3 tablespoons of wine vinegar
2 tablespoons of tomato ketchup
1 tablespoon of Worcester sauce
5-6 drops of Tabasco

Mix all the ingredients and in a bowl and have this by your BBQ with a brush, or a spoon.

Baste the steaks with the marinade as you barbecue them.

Enjoy the rich flavour of Galloway Beef!
