Grouse – not yet, but soon
It’s really summer now and the grouse up on the hill are doing really well with all this dry warm air.For us the game season seems to be only around the corner, in less than 2 months we will see the start of the gamebird season.We have a few carefully frozen oven-ready grouse left from last season, it’s the best way to celebrate on the Glorious 12th (August 12th) as the new ones won’t be on sale for a couple of weeks.
Galloway Beef
Our Galloways, raised on the same hills as the grouse and our Blackface sheep, are really well worth a try.The succulent tasty steaks on a BBQ are perfect for a summer evening, and when the sun won’t shine the topside joints make an easy and satisfying roast.The beef is dry-hung for 3 -4 weeks and is cut to your requirements.If you don’t see a cut you fancy – just call us. Woodpigeon
One bird that can be eaten all year round is the plump woodpigeon.The meat is dark, lightly gamey and cooks very fast.Because of its diet it is very high in Vitamin C, unusual in meat.It makes fabulous stir-fry or woodpigeon salad for alfresco dining.Recipe for the salad above.You can find woodpigeon in our ‘Pick and Mix’page.
Game Salad with Blaeberries – Quick and Easy lunch or starter for 4
Ingredients:
4 Woodpigeon breasts
Seasoning
Butter
100g or a big bowl of salad
50g of blaeberries or blueberries
Oil and vinegar
Method:
Take woodpigeon or 400g of any mixed game pieces, e.g. rabbit, grouse breast, venison pieces and season them with salt and pepper. Pan fry briefly in butter, set aside on a warmed plate to rest, keeping the cooking juices.
Put together a mixed leaf salad, using lettuce or mixed garden salads, celery leaves and fresh chives.
Slice the cooked game thinly and toss into the salad with the cooking juices, berries and some and oil and vinegar.
