Mr Stuart Houston, our local butcher in Dumfries, South West Scotland, makes sensational haggis for us. He is the third generation of Houston working in the same shop and their haggis formula is tried and tested and extremely popular with the locals. You should try it.

The rumour goes that the haggis can be found up in the hills lurking alongside the sheep and grouse in the heather. Special wetsuits must be donned to bring the little brutes to bay. They say that they are at their best in January — served with bashed neeps and tatties (turnips and potatoes). Others say they are a combination of lamb, oatmeal, seasoning and spices.

We are not sure of the truth but we know they make an excellent stuffing for pheasants or chicken. Some Haggis recipes here Robert Burns can’t have been wrong when he wrote - “ Fair for your honest sonsie face, great chieftan o’ the puddin’ race ”.

Stuart squeezes the Haggis into 500g natural casings and 3kg ceremonial casings for big dinners like Burns night.
